Surf Forecasts
The wave height and direction map from NOAA/NCEP is a good tool. An animated map that shows 5 day (120 hours) forecasts at 6 hour intervals.
*NOAA is National Oceanic & Atmospheric Administration, NCEP is National Centers for Environmental Prediction, an arm of the NOAA's National Weather Service (NWS).
A 6 day (144 hour) swell size and direction forecast at 12 hour intervals is available from the US Defense Department's Fleet Numerical Meteorology and Oceanography Center.

Surfline.com has a good day by day forecast summary and a detailed surf forecast for Mainland Mexico and Central America. Updated Monday, Wednesday and Friday afternoons. Look into their LOLA feature for more than you ever wanted to know about waves.
Unfortunately, Swell.com forecasts have turned into a premium service (that means you have to pay) costing $5 a month or $30 a year. Still a good deal at 10 cents a day.
Tides
The Department of Biological Sciences at the University of South Carolina has tidal information for some cities on Mexico's coast. They will give you tide predictions for up to 2 years in advance in text or table form.
